Abstract

The aim of this research was to evaluate the adoption of Good Handling Practices for mussels and shrimp sold in street markets in Grande Vitória, Espírito Santo, Brazil. This study included 11 street markets from which 36 establishments (street stalls) were sampled. The evaluation of hygienic-sanitary conditions was performed using a checklist provided based on Resolução da Diretoria Colegiada (RDC) nº 216/2004 and RDC nº 275/2002. A set of 36 (100%) of the analyzed establishments did not have exclusive sinks for hand hygiene, drinking water supply, equipment, and utensils in a proper conservation, recording and carrying out cleaning procedures and did not dispose waste properly. Only 18 (50%) establishments had handlers who used aprons, and none of the handlers washed their hands or wore gloves and caps. It should be noted that 27 (75%) of the establishments had flies and did not have product protection barriers, and no establishment monitored the temperature of selling products or used cold storage. None of the establishments had a manual of Good Handling Practices and a Standard Operating Procedure (SOP), however, all had a health license for selling. Overall, all establishments were classified as “ruim” with a total average of 9.2% compliance and 90,8% non-compliance. It is concluded that the Good Handling Practices determined by current legislation are not being properly applied in fish trades in street markets in Grande Vitória.
